Update: I can confirm after testing that @tuubi is correct. UMU-Launcher is installed as a runtime in Lutris 0.5.17 and up. There is no need to install UMU-Launcher separately. If you select "ge-proton" in the Wine list (or any version of GE-Proton really -- I tested on GE-Proton 9-23), Lutris will automatically utilize UMU to configure the prefix. I installed the game by running the installer inside the manually-created prefix.
Lutris will regularly update "ge-proton" to the latest version. If you want your installation to remain on a specific version of GE-Proton, you will need to download and install it with ProtonUp-QT, then choose that specific version in the Wine list.
One warning, though -- do not use winecfg inside a proton prefix. It is not compatible and will corrupt the prefix.
